As a restaurant owner and Chef I am constantly striving to create dishes that tantalize the taste buds, with interesting combinations, creative presentation, and overall great taste. There is a saying, If it tastes good it must be bad for you. Being in the kitchen for over 20 years I know that you don’t have to load a dish up with salt and butter for something to taste good. Through years of experience I have developed a style of cooking that emphasizes the fresh flavors of foods without incorporating the extra salt and fats. This way of thinking about food is not new, but it does take some getting used too! It is the trend to find great taste and healthy combinations that incorporate as many fresh vegetables as possible into the dish. You want the flavors to work together to harmoniously excite your taste buds while being healthy and delicious. So when you do get up from the table you can say with confidence -That was a great meal!
On our appetizer menu, we have a sweet red pepper relleno that demonstrates these qualities. A wonderful combination of locally produced chev (goat cheese) roasted garlic, parsley, toasted pine nuts and a pinch of salt and pepper rolled in a roasted red pepper and gently warmed. It is served with a light drizzle of olive oil and toasted baguette. You can make it at home or stop by and check it out! (And while you are here check out the fabulous menu for Mother’s Day)
Last year on Mother’s Day I tried something new, a three course meal. The starter course was fresh fruit and assorted Danish. The second course was an egg dish; choose Eggs Benedict, an open faced omelet or vegetable frittata. Followed by an entrée course which contained a variety of house specialties such as Roasted Filet Mignon with béarnaise sauce, Pistachio Crusted Salmon Filet, and Orange Roughy with an Orange Basil Beurr Blanc. The entrees were nicely sized and balanced and everyone enjoyed the variety. To make it extra special we didn’t forget the free flowing champagne that Mom loves, plus a kid’s menu with all of their favorites! The menu was a great success, for everyone guests and staff included. Mother’s Day is just around the corner, so make your plans for that special Mom of yours!
